What to check before ordering

If you want 120 V for general receptacles rather than control, you almost always want 480 to 208Y/120 three phase instead, because that gives you 120 V line to neutral on three phases rather than one small single phase circuit.

How many amps does a 480 V to 120 V transformer draw

It depends on the kVA. At 100 kVA the 480 V side carries about 120 amps and the 120 V side about 481 amps. Current is kVA times 1000 divided by the voltage times the square root of three, so the higher voltage side always carries less current for the same kVA.
